Friday, the day is full of departures and arrivals! Our visitors leave with their luggage full of memories, new friends and often the desire to extend their holidays or at least to come back soon. We wish them a safe trip home, waiting for their comments, pictures and news.

Tonight's menu is being prepared by Ermioni (our cook) who gave us the recipe of one of tonight’s dishes. I copy it here for a British friend who left yesterday claiming she can not cook cretan food!!! Try it, to enjoy a Cretan meal remembering your visit in
Serves: 4
Ingredients:
150 ml extra virgin olive oil
1 large onion, cut into thin slices
2 garlic cloves, finely chopped
2 small potatoes, peeled and cut into small cubes
675 gr. fresh tomatoes or 400 gr canned tomatoes, finely chopped
2/3 of a cup hot water
3-4 Tbs finely chopped fresh parsley
salt & pepper, to taste
Cut the fresh beans in half, if too long and place in a bowl filled with cold water. Sautee the onion in plenty of olive oil, add the garlic and as soon as it begins to give off a smell, throw in the cubed potatoes. After a couple of minutes have passed, add the tomatoes and hot water and allow it to boil for 5 minutes.
